RECIPE: Watermelon & Heirloom Tomato Salad

Schools may be back in session but that doesn't mean we're pulling out
the cozy sweaters yet!

Sweet watermelon & savory heirloom tomatoes are a perfect pair & make a delicious, healthy summer salad. Choose tomatoes of several different colors for dramatic appeal.

Total Time: 15 min.
Prep Time: 15 min.
Cooking Time: None
Yield: 4 servings

Ingredients
1 Tbsp. extra virgin olive oil
3 Tbsp. red wine vinegar
2 Tbsp. finely chopped basil (or mint, chives, or parsley)
¼ tsp. sea salt
¼ tsp. ground black pepper
1 cup arugula (also known as rocket)
½ medium seedless watermelon, rind removed, cut into 2-inch triangles
3 medium heirloom tomatoes, sliced into wedges
½ cup yellow cherry tomatoes, cut in half
¼ medium red onion, sliced thin
2 Tbsp. crumbled feta cheese (about ½ oz.)

Directions:
1. Combine oil, vinegar, basil, salt & pepper in small bowl; whisk to blend. Set aside.
2. Arrange arugula, watermelon, heirloom tomatoes, cherry tomatoes, & onion on a large serving platter.
3. Drizzle evenly with dressing.
4. Top evenly with cheese.

RECIPE: Weekend Huevos Rancheros

Weekend Huevos Rancheros

Total Time: 35 min.
Prep Time: 10 min.
Cooking Time: 25 min.
Yield: 4 servings

Ingredients:
2 tsp. olive oil
1 medium onion, chopped
1 (14.5-oz.) can diced tomatoes (OR fresh!)
1 (4-oz.) can diced green chiles
½ tsp. ground chili powder
¼ tsp. sea salt
Nonstick cooking spray
4 large eggs
4 corn tortillas, warm
2 Tbsp. finely chopped red onion
2 Tbsp. shredded Monterey jack cheese
Cilantro leaves (for garnish; optional)

Directions:
1. Heat oil in medium nonstick skillet over medium-high heat.
2. Add onion; cook, stirring frequently, for 4 to 5 minutes, or until onion is translucent.
3. Add tomatoes and green chiles; cook, stirring occasionally, for 10 minutes.
4. Season with chili powder and salt; cook, stirring frequently, for 5 minutes. Remove from heat. Set aside.
5. Heat large nonstick skillet, lightly coated with spray, over medium heat.
6. Add eggs one at a time, taking care egg whites don’t touch; cook, covered, for 3 minutes. Remove lid. Cook to desired yolk consistency. Remove from heat.
7. Top each tortilla evenly with onion mixture. Top gently with egg and top evenly with red onion and cheese.
8. Garnish with a cilantro leaf if desired.

Come On Get Happy...

Gooood Morning my Sunshines!!!


Let's face it...
Not all of us wake up with rainbows & unicorns dancing around in our heads!

For most of us, mornings start off at a hurried pace & it's so easy to let those grumpies take the wheel. Well, I just want to quickly share with you a few of MY (mostly) never fail ways to make sure that when I roll outta bed in the AM, I'm rolling out in my happy place!

1. SMILE: 


 ...Seriously!!!  I read this tip somewhere years ago & had the same response that you're probably having now which was "YA RIGHT!", with a classic eyeroll! Well, I tried it & I'm happy to report it actually works! Not just any ol' smile. A full-on, genuine, face scrunching smile!  Like even before you even open your eye peepers, get that smile happening.  It's like giving your brain a morning fake out before it can figure out what it's actually feeling! #fakeittilyoumakeitbaby

2. SUN SALUTATIONS:  



Sun salutations are the PERFECT wake me up, pick me up, get my blood pumping morning routine!
Whether you roll outta bed & just make your way thru, saaaay... 3 sets or maybe you spend 10-15 minutes waking up your mind & body with them, I promise you, it will be time well spent & you will feel so much better about moving on with your day!

3.  DESSERT FOR BREAKFAST:


Who wouldn't get happy from having a banana split for breakfast, right!?!
When I first started the 21 Day FIX, I was trying to come up with different breakfast ideas that worked for me & this stroke of brilliance hit me!
The breakfast banana split!!!
Just the thought of being able to answer somebody who asks what I had for breakfast with "I had a banana split" gets me giggley!
This banana split is quick, healthy & yummy!

All you need is:
1/2 banana
6oz greek yogurt
cinnamon
1oz sunflower seeds (or chia, flaxseeds, pecans, something along those lines but NOT peanuts)
1 packet of Stevia (optional)
& I of course HAVE to add my (frozen) cherry on top!

So go ahead... have fun with your breakfast!

Well... those are my 3 quick tips for starting your day off HAPPY!

Confessions of a Naughtly 21 Day FIXer...

OK so today is Day 13 in my 21 Day FIX journey... but I have a little confession to make!  I was a naughty girl over the weekend!

This weekend I headed out to Arizona for a little birthday/Spring Training adventure to see my favorite Boys in Blue! 

While I had EVERY intention of being good, (I packed my containers, my coconut oil, Shakeology, & workouts) it just was way too easy to NOT do what I know I should've! (hanging head in shame)  

Now, I wasnt completely horrible!  Breakfast both days fit nicely into the plan, Shakeology made it's appearance for my snack but once I hit the baseball stadiums, all bets were off!  Well, wait.... does throwing away half of the hotdog bun count?  Because I DID do that! ;)  

AND I must at least give props to the fact that while everywhere I went the french fries were calling my name, seeeeriously, it's like I could hear them literally calling my name... I just kept walking & not ONE fry passed these lips! #BOOM

So, like many people, the guilt immediately set in as I hit the road for home!  The usual self abuse of "REALLY!?! How could you have blown this! It's only 21 days!" was pulsing through my head the whole way home!  

HOWEVER... this is where the genius comes in!  I could give up. I could talk my way out of this with excuses. & I certainly could just say "Ah, I'll just start again"  but like Autumn says, "If you're tired of starting over, stop quitting!"  So, this girl is not quitting!  It was only 2 days!  2 CHEAT days does not a failure make!  

I woke up today even more determined (& a lot sunburned from the weekend) and got right back on the horse!  
Eating plan... NAILED IT!  
Workouts... Started doubles today instead of Wednesday to make up for the lost weekend!

I'm excited about the next 8 days & what they hold in store!  My birthday is Wednesday, & I even have my eating plan laid out for that day, including sushi for dinner (it's on the meal plan!).  

It's SO amazing to have a fitness & nutrition program to follow as a way to not only keep on track but to get back on track after an inevitable CHEAT day (or weekend)! ;)

The 21 Day FIX | Weight-loss Challenge

Nine days ago I started a new chapter in my fitness journey with Beachbody's latest program, The 21 Day FIX!  I have done & loved their T25 & P90X3 programs because let's just be honest, anything I can get done in 30 minutes is golden to me!  Anything longer than that just makes my fitness ADD kick in! lol


Like most people who get going on their own health & fitness journeys, I have been making an effort to eat "healthy" foods & stay away from the obviously evil (but oh so good) foods as much as possible.  Knowing what & how I should eat just hasn't been enough to keep me on track with the nutrition part.  Now don't get  me wrong, all of Beachbody's fitness programs come with amazing nutrition programs but for me, they've just left too much room for squirreling & laziness which ultimately just doesn't work!  

Everything you need to lose weight. 
Simply and quickly.

What had me excited about The 21 Day FIX was the new eating program that the FIX's trainer, Autumn Calabrese, had put together as a part of it.  It's a simple, no calorie counting, portion controlled system that uses cute little colored containers to help you keep track of what & how much you are supposed to be eating!  Pretty cool right!?!  
Oh, & PS... you get to have wine & chocolate on this program (and I have!)

The eating plan booklet includes everything you need to know to successfully be able to customize the program to your life & goals.  In addition to a complete list of foods associated with each color coded container, there are tons of meal ideas & recipes to sweeten the deal! 
Here is what one of my dinners from week 1 looked like & the corresponding containers.  You can see I am NOT going hungry on this program!

You are allowed 6 cheats/treats/zings(as the program calls them) a week & this includes, wine, chocolate, cookies, etc!  
I made the Oatmeal Cookies with Chocolate Morsels & Toasted Pecans for one of my "zings"... SO yummy!  Best part is that 2 cookies only counted as 1 of my yellow containers for the day!
(I had already eaten 1 of the cookies before I thought to take a pic! lol)

Ok, so I know all this is good & well but what you REALLY want to know is does this work!?! How well can working out just 30 minutes a day, eating 6 meals a day & being able to still have wine & treats truly work!?!

Well, I am ridiculously excited to share that after just 7 days on the program, I had lost 10 pounds & 2 1/2"!  Whaaat!?!  It's bananas I know!  But like I said, the eating plan is EVERYTHING!!!  Just cutting all the extra crap, extra portions, etc out makes such a HUGE difference in how our bodies are able to regulate.  They simply function more efficiently when we're not loading them down with CRUD!!!
