Fit Tip...


Beware of labels promising “real fruit juice”! 
Most of theses fruit juices may sound healthy, especially when they promise to have "added vitamins" but juice is basically a stripped-down version of its origins. Meaning, the fiber from the skin is removed and you are left with mainly sugar. 
A typical eight-ounce serving of juice packs in 20 to 30 grams of sugar—the amount you’d find in a regular soda! 
Sure, it’s better to choose fruit juice over soda, but if you really want extra vitamins, grab an apple instead (the fiber it contains slows down sugar absorption) & wash it down with water.

RECIPE: Watermelon & Heirloom Tomato Salad

Schools may be back in session but that doesn't mean we're pulling out
the cozy sweaters yet!

Sweet watermelon & savory heirloom tomatoes are a perfect pair & make a delicious, healthy summer salad. Choose tomatoes of several different colors for dramatic appeal.

Total Time: 15 min.
Prep Time: 15 min.
Cooking Time: None
Yield: 4 servings

Ingredients
1 Tbsp. extra virgin olive oil
3 Tbsp. red wine vinegar
2 Tbsp. finely chopped basil (or mint, chives, or parsley)
¼ tsp. sea salt
¼ tsp. ground black pepper
1 cup arugula (also known as rocket)
½ medium seedless watermelon, rind removed, cut into 2-inch triangles
3 medium heirloom tomatoes, sliced into wedges
½ cup yellow cherry tomatoes, cut in half
¼ medium red onion, sliced thin
2 Tbsp. crumbled feta cheese (about ½ oz.)

Directions:
1. Combine oil, vinegar, basil, salt & pepper in small bowl; whisk to blend. Set aside.
2. Arrange arugula, watermelon, heirloom tomatoes, cherry tomatoes, & onion on a large serving platter.
3. Drizzle evenly with dressing.
4. Top evenly with cheese.

RECIPE: Weekend Huevos Rancheros

Weekend Huevos Rancheros

Total Time: 35 min.
Prep Time: 10 min.
Cooking Time: 25 min.
Yield: 4 servings

Ingredients:
2 tsp. olive oil
1 medium onion, chopped
1 (14.5-oz.) can diced tomatoes (OR fresh!)
1 (4-oz.) can diced green chiles
½ tsp. ground chili powder
¼ tsp. sea salt
Nonstick cooking spray
4 large eggs
4 corn tortillas, warm
2 Tbsp. finely chopped red onion
2 Tbsp. shredded Monterey jack cheese
Cilantro leaves (for garnish; optional)

Directions:
1. Heat oil in medium nonstick skillet over medium-high heat.
2. Add onion; cook, stirring frequently, for 4 to 5 minutes, or until onion is translucent.
3. Add tomatoes and green chiles; cook, stirring occasionally, for 10 minutes.
4. Season with chili powder and salt; cook, stirring frequently, for 5 minutes. Remove from heat. Set aside.
5. Heat large nonstick skillet, lightly coated with spray, over medium heat.
6. Add eggs one at a time, taking care egg whites don’t touch; cook, covered, for 3 minutes. Remove lid. Cook to desired yolk consistency. Remove from heat.
7. Top each tortilla evenly with onion mixture. Top gently with egg and top evenly with red onion and cheese.
8. Garnish with a cilantro leaf if desired.
