RECIPE: Chia Quinoa Muffins


Summer's coming to an end, schools are back in session & traffic is about to get BANANAS!!!
These babies are a deLISH option for a healthy breakfast (or snack) on the go! 
They're filled with good for you superfoods & a great protein source... 
thank you very much greek yogurt!!!

INGREDIENTS
2 cups cooked quinoa
1/4 cup banana Greek yogurt (I thought it added a fun flavor!)
1 cup whole wheat flour
1 cup all-purpose flour
3/4 cup coconut palm sugar ( or brown sugar)
1 1/2 tsp. baking powder
1 tsp. salt
2 Tbsp chia seeds
3/4 cup fat-free milk
1 egg

INSTRUCTIONS
1.Preheat oven to 350 degrees F.
2.Cook quinoa according to package directions & let cool for about 5 minutes.
3.In medium bowl, combine quinoa, flours, sugar, baking powder, salt and chia seeds.
4.In a smaller bowl, whisk together milk, egg, yogurt & vanilla extract.
5.Slowly add to quinoa mixture and stir until just combined.
6.Divide mixture evenly among 15 greased muffin tins & bake for about 25 to 30 minutes, until a toothpick inserted in the center comes out clean.
7.Allow to cool for about 5 minutes and ENJOY!
